Pan Fried Snapper with Arugula Salad

Ingredients:
1 Snapper Fillet
A pinch of Salt and Pepper
1/3 cup of Olive Oil
Chopped Onions Cherry
Tomatoes Red Cabbage
Avocado Orange Arugula

Instructions:
Place Olive oil in warm pan
Fry the Snapper Fillet in medium heat
Mix Chopped Onions, Cherry Tomatoes, Red Cabbage, Avocado, Orange, Arugula in a salad  bowl and toss.

Flip Snapper Fillet on other side to cook evenly. Once done place snapper on dish with Arugula Salad. Serve and enjoy.

Sustainable source​

We participate in the TNC Fishery Improvement Project in Indonesia lead by The Nature Conservancy.
As a condition to participate we had to accept to follow a minimum size to support reproduction of the specie, which was tough considering that market demand is mostly on small size, but we did it and we hope buyers, importers, distributors and chefs will support and help educate consumers.

In future we will bring our FIP experience to Vietnam snapper fishery management as well.

Frozen at Sea (FAS) Raw Material

Freezing the fish right after it is caught helps preserve the fish and maintains quality and freshness. Compare to weekly/monthly catch which often is not well preserved, our raw material is much better.

Expert in Production

We are well experienced on handling the fish properly during all stages. Even the raw material is in frozen state, we can cut it or thaw it well under 5C for cutting and freeze it in same day.

SHRIMPS MARKET UPDATE OCTOBER 2020

Product description:

The Shrimps market has now entered the off-season stage in a strong demand market pushed by USA and Europe. From Central to South Vietnam, ponds are now empty and farming is on rotation to minimize the risk associated with bad weather.


In the Central of Vietnam the typhoon season has started with the usual strength and power so farming has nearly halved, restarting will happen only after TET 2021 scheduled for February 12, so main harvest commencing around end May. In the South this year started seeding the 2nd crop earlier than last year due to the colder weather brought by La Nina. So now South Vietnam is preparing for the dry season which will be peak in the November/December.


MARKET:
Vietnam factories are flooded by orders with major producers fully booked until year end, especially from the European retailers increasing orders of cooked shrimps after the EU-VN Free Trade Agreement went into the effect + weak availability of certified ASC raw material in other origins.


There is no availability of small sizes as most of it where booked on annual contracts in the months of May-June by the European markets. The medium and big sizes have therefore gone up in prices, reversing the weakness trend of the June-July months.


OUTLOOK:
The price may go up higher in next coming weeks if the weather turns bad, but will remain in line with last year. On the other end, we forecast quantity scarcity.The raw material is getting more scarce due to off season, diseases plus farmers reduce farming quantity. There will be no raw material or very few early next year Jan-April while waiting for the main crops coming in May.

Clams are an alive animal and we need to give it the best natural conditions for it to thrive and expel sand, dirt, mud and all the other impurities that affect its quality and can even harm a consumer.

Depurating the clams properly and carefully is essential and passes through many little details that creates the best conditions and range from fishing, to collection, to logistic organization, to plant layout and DE purification parameters like salinity of the water, water change frequency and many others.

Our supply chain control starts from the farming zones, which we have to map and monitor for the absence of excess mud or the presence of enough Phytoplankton for the clams to feed and grow.

Daily caught by Pole and Bait boats, Octopus Maya lands freshness at our plant in multiple daily delivery.
Octopus Maya is a high freshness octopus performing well in a variety of products and cut: Whole Round Cleaned, Whole Cooked and Cut, Tentacles Cooked and Cut, Sushi.
It is suitable for grilling, frying and for sushi as well, so it is a key octopus item for both foodservice and retail.

Our factory Promarmex is located in Progresso, Yucatan, on the beach about 1 hour from Merida city.

Responsible Sourcing:

Yucatan octopus is caught in an artisan fishery based on a traditional catching method using Poles and Bait, no hook.

The octopus male adhere himself to the bait in attempt to get food, so it is captured alive without harm.

The catching method allow fisherman to return to the sea the octopus below the 450gr size as required by law, and there are no by catches.

In addition, this type of catch is based on the fact that female octopus stop eating when they are ovulating, consequently we avoid catching and interrupting reproductive cycle of octopus as well as increase development of the species.

The fishery is truly sustainable and we participate in an FIP project aimed at reaching MSC certification.
